About Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky
"Our family links to the whisky industry date back to 1824," says William Wemyss, the founder and CEO of Wemyss Malts, "when John Haig built his distillery on family land in Fife."Wemyss (pronounced "Weems") is the ancient Gaelic word for caves and stems from the rocky outcrop on which the Wemyss family home — Castle Wemyss — rests. Haig's distillery eventually became known as Cameron Bridge and in 1826, it became the first distillery to produce grain whisky using the column still method invented by Robert Stein.Today, the Wemyss family expertly bottles some of the finest whiskies made across Scotland. "Our whiskies are chosen by a tasting panel," says Wemyss, "and the tasting panel comprises people who work in the business, members of the family, and most importantly, is chaired by Charlie MacLean who helps us select the industry's best whiskies to bottle under our brand."
MacLean, who has been writing about whisky since 1981, was trained in "the sensory evaluation of potable spirits"by the Scotch Whisky Research Institute in 1992. In addition to being a visiting lecturer at the Smithsonian Institution, he is also a Councillor of Clan Maclean and was elected Master of the Quaich (Quaich is derived from the Gaelic word meaning cup), one of the Scotch industry's highest accolades, in October 2009.
Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky was distilled at the Caol Ila Distillery and matured for three decades in a single cask. Nestled in a hidden cove near Port Askaig, Caol Ila Distillery (pronounced "Cull Eela,") was founded in 1846 by Hector Henderson. It borrows its name (which means "The Sound of Islay"in ancient Gaelic) from the sea sweeping past its dramatic and almost hidden location — it is situated between a steep cliff and the eastern shores of the Sound of Islay. For over a century, small coal-fired boats known as puffers navigated the Sound and brought barley, coal and casks to the distillery. Although the puffers no longer exist, Caol Ila continues to distill whisky using locally malted barley, along with pure spring water sourced from Loch Nam Ban (the water travels thr ough limestone and peat before reaching the distillery).
Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky has an aroma of mellow smoke, heathered honey and creamy vanilla. The aroma gives way to notes of burning embers, light citrus and a touch of peppers on the palate, and leads to a finish accented by hints of caramel, chilis and burnt smoke.

About Jim Beam Distiller's Masterpiece Sherry Cask Finished Bourbon
Jim Beam Distiller’s Masterpiece is Fred Noe’s magnum opus. After hand-selecting extra-aged bourbons that were aging in the optimal positions of his rickhouse, Noe finished the bourbon in Pedro Ximénez sherry casks. The sherry casks contributed unique notes of plums, dates, dark fruits and cherries to the bourbon, which complement its subtle touches of dark leather, moist tobacco, chocolate and coffee.Packaged in a luxury wooden case and bottled at 100 proof, “this bourbon expression from Jim Beam is the most exclusive, highest quality offering within the family” says Noe.

About Jim Beam
Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States, and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia, and was overseen by a military governor named John J. Bowman. In order to encourage westward expansion, Virginia issued pioneers who agreed to settle in Kentucky County "corn writs," which granted the pioneers 60 acres of land if they agreed to settle in Kentucky and start farming corn.After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition). Today, Fred Noe — a seventh generation master distiller and the great grandson of Colonel James B. Beam — shepherds his family legacy forward.

About Springbank 19 Year Old Single Cask Single Malt Scotch Whisky (Cask Strength)
Nearly two centuries ago, the town of Campbeltown, located on a narrow peninsula in southwest Scotland, was considered the whiskey capital of the world. Passengers arriving by sea at Campbeltown Loch, nestled between Macringan's Point and the rocky island of Davaar, were greeted with the sails and masts of the herring fishing fleet and the smoking chimneys of nearly thirty different distilleries that called Campbeltown home. Two hundred years later, Campbeltown Loch is considerably quieter and only three chimneys continue to billow smoke — each acting as a beacon for an industry that, at one point, dominated the peninsula.In 1828, Springbank Distillery was founded on the site of Archibald Mitchell's illicit still in Campbeltown (today, Mitchell's great-great-great-grandson owns the distillery). Within ten years, its whiskey was so well-regarded that a blender by the name of Johnnie Walker purchased 118 gallons of whisky from Springbank at 43 pence a gallon.
By the turn of the century — as worldwide demand for Scotch whisky seemed insatiable — distilleries throughout Scotland began cutting corners and outsourcing parts of the distillation process. Springbank Distillery, however, remained true to its Scottish heritage. Today, it remains one of only two distilleries in Scotland to perform every step of the whiskey making process — from malting barley to bottling whisky — on the same premises.
After malting and lightly peating the barley (using locally cut peat), Springbank Distillery mills and mashes it in cast-iron mash tuns that are nearly a century old. The pure spring water used during the mashing process is sourced from Crosshill Loch, which in turn is fed by springs seeping from the northern slopes of 1100-foot tall Beinn Ghuilean. After mashing the grains, the wash is slowly fermented over the course of 70 hours — one of the longest fermentation processes in Scotland — before being distilled 2.5 times (because some of the wash is distilled twice and some is distilled three times, Springbank Whisky is said to be distil led 2.5 times).
Following distillation, the whisky is aged for 19 years in a single cask that was previously used to mature sherry. This sherry cask contributes notes of red plums, berries, dark citrus and caramel to the whisky. In addition, the strong, perennial sea winds along Campbeltown add a hint of salty tang to the whisky as it matures. Following its beautyrest, the whisky is bottled at cask strength without the use of any artificial coloring or chill filtration.

After hand selecting forty Suduiraut barrels, refilling them with Jefferson’s Reserve bourbon, and extra aging them in a proprietary “hot box” environment, they have created a one of a kind bourbon full of character and flavor. This expression combines the sweetness of Sauternes, the wood notes of both American and French oak, and the grain of premium bourbon in a delicious, complex and balanced final product.

During his tenure as President, Jefferson authorized the purchase of the Louisiana Territory, dispatched Lewis and Clark westward to explore the remainder of the continent, and repealed the Whiskey Excise Tax.After Jefferson retired from public office in 1815, he often tended to the garden that he had cultivated at his Monticello estate. At the time, it was customary for wealthy farmers, including Jefferson, to make their own garden spirits. Each farmer's spirits were unique and reflected their personal tastes and the local terroir of their farm. Jefferson's Reserve Very Old Straight Bourbon Whiskey is crafted by Chet and Trey Zoeller in honor of Jefferson and his experimental nature.
